Indulgent cheesy chicken lasagna with spinach features a luscious white sauce enriched with mozzarella, Parmesan, and ricotta cheeses.
Ingredients:
  • 9 lasagna noodles
  • 0.5 cup butter
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 0.5 cup all-purpose flour
  • 2 cups chicken broth
  • 1.5 cups milk
  • 4 cups shredded mozzarella cheese, divided
  • 1 cup grated Parmesan cheese, divided
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 cups ricotta cheese
  • 2 cups cubed, cooked chicken meat
  • 2 (10 ounce) packages frozen chopped spinach, thawed and drained
  • 1 tablespoon chopped fresh parsley
Instructions:
  • Prepare all your ingredients and preheat the oven to 350°F (175°C).
  • 1. Boil a large pot of lightly salted water. Add lasagna noodles and cook for 8 to 10 minutes until al dente. Drain and rinse with cold water.
  • In a large saucepan over medium heat, melt butter until bubbly and fragrant. Add in the onion and garlic, stirring gently until softened. Sprinkle in the flour, cooking until a light golden color is achieved, for roughly 2 minutes. Pour in the chicken broth, milk, and a pinch of salt, continuing to whisk incessantly for 1 minute.
  • Mix 2 cups of mozzarella and 1/4 cup of Parmesan until fully incorporated. Add in basil, oregano, and black pepper for flavor. Take the mixture off the heat and keep it aside.
  • Evenly coat the bottom of a 9x13-inch baking dish with one-third of the sauce mixture.
  • Create a luscious lasagna by arranging 3 noodles, ricotta cheese, and chicken in enticing layers.
  • Place 3 lasagna noodles on top of the chicken, then spread 1/3 of the sauce mixture, spinach, the rest of the mozzarella (2 cups), and 1/2 cup of Parmesan over the noodles.
  • Layer the remaining noodles on top of the cheese, ensuring they are evenly distributed. Pour the rest of the sauce over the noodles, making sure it covers them entirely. Garnish with parsley and sprinkle the remaining 1/4 cup of Parmesan cheese on top.
  • Place your creation in the oven already set to the perfect temperature and let it bake for 35 to 40 minutes to achieve perfection.
