Creamy ricotta white sauce with chicken and cheese for a quick and satisfying meal.
Ingredients:
  • 150g sliced leg ham
  • 2 green shallots
  • 550g (4 cups) shredded barbecue or roast chicken
  • 400g fresh ricotta
  • 300ml Light Thickened Cooking Cream
  • 2 eggs
  • 160g (2 cups) pre-grated cheddar
  • 100g (1 cup) pre-grated mozzarella
  • 80g baby spinach
  • 225g fresh lasagne sheets
  • Finely chopped fresh continental parsley, to serve
Instructions:
  • Preheat your oven to 180C/160C fan forced, then lightly grease a 6cm deep, 30 x 20cm baking dish.
  • Roughly chop the ham and place in a large bowl along with thinly sliced shallots. Add the chicken and mix well. In a separate large bowl, combine the ricotta, cream, and eggs. Season generously and stir until smooth. Combine the cheddar and mozzarella in another bowl.
  • Layer half of the chicken mixture on the bottom of the dish. Add half of the spinach, one-third of the ricotta mixture, and one-third of the cheese mixture. Place half of the lasagne sheets, cutting to fit. Repeat the layers with the remaining chicken mixture, remaining spinach, half of the ricotta mixture, half of the grated cheese mixture, and the remaining lasagne sheets.
  • Top with the remaining ricotta and cheese mixture, then bake until golden brown, about 45-50 minutes. Let stand in the dish for 10 minutes before serving. Sprinkle with parsley before enjoying.
