Indulge in this luxurious Chicken Alfredo Lasagna with layers of noodles, ricotta, spinach, creamy white sauce, and gooey mozzarella cheese - a beloved family dinner option.
Ingredients:
  • 1 (16 ounce) package lasagna noodles
  • 1 (10 ounce) package frozen chopped spinach
  • 3 cooked, boneless chicken breast halves, diced
  • 2 (16 ounce) jars Alfredo-style pasta sauce
  • 2 pints ricotta cheese
  • 4 cups shredded mozzarella cheese
  • salt and ground black pepper to taste
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • 1. Boil a large pot of lightly salted water. Cook lasagna noodles until they are al dente, about 8 to 10 minutes, then drain.
  • In a 2-quart nonstick saucepan, combine frozen spinach and 1/2 cup water. Bring to a boil, then reduce heat to medium-high, cover, and cook for 6 to 7 minutes until spinach is tender. Drain and squeeze out excess water before using.
  • Combine the chicken and 1 jar of Alfredo sauce in a medium bowl, stirring until fully mixed.
  • Combine ricotta and spinach in a medium bowl, stirring until fully mixed.
  • Layer lasagna noodles in a 9x13-inch baking dish, slightly overlapping. Pour chicken-Alfredo mixture over noodles, then top with 1 cup mozzarella. Add another noodle layer, followed by spreading the spinach mixture evenly. Pour half the jar of Alfredo sauce over spinach, then sprinkle with 1 cup mozzarella. Add final noodle layer, and pour remaining Alfredo sauce over, finishing with a 2-cup mozzarella topping. Season with salt and pepper.
  • Bake in the oven until golden brown and bubbling, approximately 50-60 minutes.
