Elegant individual lasagna rolls filled with spinach and ricotta, baked in creamy Alfredo sauce. Perfect for entertaining!
Ingredients:
  • 8 lasagna noodles
  • 1 tablespoon olive oil
  • 1 (10 ounce) package frozen chopped spinach
  • 2 tablespoons thinly sliced green onion
  • 1 pint part-skim ricotta cheese
  • 0.25 cup grated Parmesan cheese
  • 21 ounces Alfredo-style pasta sauce
  • 1 cup shredded mozzarella cheese
Instructions:
  • 1. Boil a pot of generously salted water. Cook lasagna noodles for 8 to 10 minutes until they are firm but tender. Finish by rinsing in cold water and draining thoroughly.
  • In a large saucepan over medium heat, sauté the broccoli or spinach and green onions in oil until tender, stirring frequently. Remove from heat and mix in the ricotta cheese, Parmesan cheese, salt, and egg.
  • Preheat your oven to a piping hot 375 degrees F (190 degrees C).
  • Lay noodles flat on waxed paper. Spread cheese mixture evenly on each noodle. Roll up noodles jelly-roll style from the short end.
  • Spread a generous layer of 3/4 of the Alfredo sauce at the bottom of an 8x12 inch baking dish. Place the rolled noodles, seam side down, in the dish. Add a layer of mozzarella cheese, followed by the remaining sauce. Cover with foil and bake in a preheated oven for 30 minutes until bubbly with melted cheese. Serve hot.
