Cheesy spinach chicken Alfredo lasagna - Layers of tender chicken, spinach, creamy Alfredo sauce, and a blend of melted mozzarella, ricotta, and Parmesan cheese, all nestled between lasagna noodles.
Ingredients:
  • 5 mushrooms, diced
  • 1 (8 ounce) package lasagna noodles
  • 3 cups heavy cream
  • 2 (10.75 ounce) cans condensed cream of mushroom soup
  • 1 cup grated Parmesan cheese
  • 0.25 cup butter
  • 1 tablespoon olive oil
  • 0.5 large onion, diced
  • 4 cloves garlic, sliced
  • 1 roasted chicken, shredded
  • 1 cup ricotta cheese
  • 1 bunch fresh spinach, rinsed
  • 3 cups shredded mozzarella cheese
Instructions:
  • Prepare your ingredients.
  • Preheat your oven to 350 degrees F (175 degrees C). In a large pot, boil salted water. Cook lasagna noodles for 8 to 10 minutes until al dente. Drain and rinse with cold water.
  • Combine heavy cream, cream of mushroom soup, Parmesan cheese, and butter in a saucepan over low heat. Stir frequently and simmer until everything is well blended.
  • In a skillet over medium heat, sauté the onion in olive oil until tender. Add garlic and mushrooms, and continue cooking.
  • Combine the chicken, cooking until warmed. Season generously with salt and pepper.
  • Gently spread a layer of the cream sauce mixture on the bottom of a 9x13 inch baking dish.
  • Create a beautiful layer starting with 1/3 of the lasagna noodles, followed by a generous 1/2 cup of creamy ricotta and a luscious 1/2 portion of the flavorful spinach.
  • Layer half of the chicken mixture, followed by 1 cup of mozzarella cheese. Spread a third of the cream sauce mixture on top and repeat the layers.
  • Layer the remaining noodles on top and generously spread them with the remaining sauce.
  • Bake in the preheated oven for 1 hour until golden and bubbly. Sprinkle the remaining mozzarella on top and bake until melted and slightly browned.
