Rotisserie chicken lasagna roll-ups with creamy Alfredo sauce for a twist on traditional lasagna.
Ingredients:
  • 8 lasagna noodles
  • 1 rotisserie chicken - skinned, deboned, and meat shredded
  • 2 cups shredded Italian cheese blend
  • 0.5 (8 ounce) container mascarpone cheese
  • 1 tablespoon Italian seasoning
  • 0.25 teaspoon ground white pepper
  • 0.25 cup diced onion
  • 1 (16 ounce) jar Alfredo sauce
Instructions:
  • Boil a large pot of lightly salted water. Add lasagna noodles and cook until al dente, about 8 minutes. Drain and set aside.
  • Combine shredded chicken, Italian cheese, mascarpone cheese, garlic, Italian seasoning, and white pepper in a large bowl, blending well.
  • Heat your oven to 350°F (175°C).
  • In a skillet, heat oil over medium heat, then add onion and cook until soft and translucent, about 5 minutes. Lower the heat, continue cooking until onion starts to brown, about 5 more minutes. Add garlic and saute until fragrant for 1 to 2 minutes. Mix into the chicken mixture with egg until combined.
  • Take the chicken mixture and evenly spread it onto a lasagna noodle, then roll it up and place it seam-side down in an 8-inch square baking dish. Repeat the process with the remaining roll-ups and pour Alfredo sauce over the top before baking.
  • Bake in the preheated oven for 45 minutes until hot and bubbly.
