Elevate your lasagna with three cheeses, rotisserie chicken, and fresh spinach for a delicious twist.
Ingredients:
  • 1 egg, beaten
  • 1/2 cup unsalted butter
  • 2 cloves garlic, finely chopped
  • 1/2 cup all-purpose flour
  • 2 cups whole milk
  • 2 cups Progresso™ chicken broth (from 32-oz carton)
  • 1 tablespoon Italian seasoning
  • 12 no-boil lasagna noodles
  • 2 cups shredded deli rotisserie chicken
  • 3 cups baby spinach leaves
  • 1 container (15 oz) whole milk ricotta cheese
  • 1 cup shredded mozzarella cheese (4 oz)
  • 3/4 cup water
  • 3 tablespoons Progresso™ Italian-style bread crumbs
  • 1/2 cup shredded Parmesan cheese
Instructions:
  • Preheat oven to 375°F and generously coat a 13x9-inch baking dish with cooking spray.
  • In a 4-quart saucepan, melt butter over medium heat. Add garlic and cook for 2 to 3 minutes until fragrant. Gradually whisk in flour and cook for about 1 minute until smooth. Pour in milk and broth, 1 cup at a time, stirring until thickened. Remove from heat and stir in Italian seasoning.
  • In a baking dish, layer 1 cup of the milk mixture followed by 3 lasagna noodles. Sprinkle one-third of the chicken and 1 cup of spinach over the noodles. In a small bowl, combine ricotta and egg. Spread one-third of the ricotta mixture on top of the chicken and spinach.
  • Layer 3 lasagna noodles over the ricotta, pour 1 cup of the milk mixture on top, sprinkle one-third of the chicken, add 1 cup of spinach, and spread one-third of the ricotta mixture.
  • Create another layer using 3 lasagna noodles, 1 cup of milk mixture, the rest of the chicken and spinach, and the remaining ricotta. Top with the final 3 lasagna noodles and the rest of the milk mixture. Sprinkle generously with mozzarella cheese. Pour water over the lasagna, then cover the pan with foil.
  • Bake uncovered for 45 minutes. Sprinkle bread crumbs and Parmesan cheese on top. Bake for an additional 10 to 15 minutes until topping is golden and bubbly. Let it cool for 10 to 15 minutes before slicing.
