Garlic Parmesan chicken zucchini skillet served with fluffy rice for a simple weeknight dinner.
Ingredients:
  • 1 pound boneless skinless chicken breast halves, cut into bite-sized chunks
  • 2 cloves garlic, chopped
  • 2 tablespoons olive oil, divided
  • 1 (12 ounce) bag Birds Eye® Recipe Ready Sliced Zucchini
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon chopped Italian parsley, or to taste
Instructions:
  • Combine the chicken, garlic, 1 tablespoon of oil, salt, and pepper in a large bowl and mix well.
  • Heat a large nonstick skillet over medium-high heat until sizzling. Cook the chicken, stirring occasionally, until beautifully golden on the outside, completely cooked through, and juices run clear, about 6 to 8 minutes. Transfer the succulent chicken to a plate.
  • In a skillet over medium heat, warm the remaining tablespoon of oil. Cook zucchini until tender and slightly browned, about 5 minutes. Add chicken and heat for 2 to 3 minutes. Finish by sprinkling with Parmesan cheese and parsley.
