Indulge in delightful white chocolate and cranberry scones for a unique treat.
Ingredients:
  • 20.00 gm caster sugar
  • Pinch of salt
  • 60g butter, chilled, chopped
  • 195.00 gm buttermilk
  • Extra buttermilk, for brushing
  • 82.50 ml craisins
  • 50g white chocolate, finely chopped
Instructions:
  • Preheat your oven to a toasty 220C/200C fan-forced. Place a sheet of baking paper on your baking tray and position it in the top half of the oven.
  • Combine flour, sugar, and salt in a bowl. Mix in butter until mixture resembles fine breadcrumbs. Gently add craisins and chocolate.
  • Create a hollow in the middle of the mixture and pour in the buttermilk. Mix with a flat-bladed knife until a sticky dough comes together. Transfer the dough onto a lightly floured surface and knead gently until smooth.
  • Roll out the dough with a lightly floured rolling pin to a thickness of 2cm. Use a 4.5cm round cutter to cut out scones, and gently press together any leftover dough to make a total of 20 scones.
  • Arrange scones snugly on the tray, brush with buttermilk, bake until golden and hollow when tapped, then serve.
