White chocolate crackle fudge slice recipe

Festive White Christmas fudge slice is a simple and delicious treat for all ages.
Ingredients:
  • 105g (3 cups) rice bubbles
  • 85g (1 cup) desiccated coconut
  • 50g Copha or coconut oil
  • 280g white chocolate, chopped
  • 395g can sweetened condensed milk
  • 540g white chocolate, chopped
  • 25g salted butter
  • 4.40 gm vanilla extract
  • 1/2 cup Pistachios, chopped
  • 75g (1/2 cup) dried cranberries, chopped
Instructions:
  • Prepare a 20 x 30cm slice pan with baking paper, letting it overhang by 3cm on each long side. Mix rice bubbles and coconut in a large bowl.
  • In a heatproof bowl set over a saucepan of simmering water, melt copha or coconut oil along with 180g of chocolate. Ensure the bowl does not touch the water. Stir with a metal spoon occasionally for 2 minutes until smooth.
  • Combine the chocolate mixture with the rice bubble mixture, stirring until fully incorporated. Spread the mixture over the prepared pan, smoothing the surface. Chill in the fridge for 1 hour until firm.
  • To prepare the white chocolate fudge, combine sweetened condensed milk and chocolate in a saucepan. Melt over gentle heat, stirring frequently, until smooth. Add butter and vanilla extract, stirring until smooth. Take off heat and mix in pistachios and cranberries. Pour the fudge over the white chocolate layer, ensuring a flat surface. Refrigerate for 3 hours to set.
  • Put the remaining 100g white chocolate in a microwave-safe bowl. Microwave on Medium heat, stirring halfway through, for about 1 minute until it's melted and smooth. Transfer the chocolate to a ziplock bag, snip off a corner, and drizzle it over the slice. Chill in the fridge for 30 minutes until firm. Cut into small pieces before serving.
