Decadent flan with mascarpone, cream cheese, and white chocolate for a creamy and sweet treat.
Ingredients:
  • 1 cup white sugar
  • 2 tablespoons brown sugar
  • 2 tablespoons water
  • 1 (12 ounce) package white chocolate chips
  • 1 (8 ounce) package cream cheese, softened
  • 1 (8 ounce) container mascarpone cheese
  • 1 (12 fluid ounce) can evaporated milk
  • 1 (14 ounce) can sweetened condensed milk
Instructions:
  • In a saucepan over medium-high heat, mix white and brown sugar with water until the sugar is fully dissolved, stirring occasionally. Once it boils, refrain from stirring to avoid crystallization.
  • Swirl the pan gently to evenly spread the caramel as the sugar starts to darken. Cook until it reaches 310 degrees F (160 degrees C) or turns a light golden brown. Remove from heat promptly to prevent further browning.
  • Pour the luscious caramel into an 8-inch baking dish, ensuring it covers the bottom and sides perfectly. Allow the caramel to cool and harden for about 5 minutes.
  • Preheat your oven to 325°F (165°C).
  • Melt the white chocolate in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring between each, for 1 to 3 minutes. Be careful not to overheat to avoid scorching the chocolate.
  • Combine the cream cheese, mascarpone cheese, evaporated milk, sweetened condensed milk, eggs, and melted white chocolate in a bowl and mix until silky smooth.
  • Drizzle the creamy cheese mixture over the set caramel.
  • Set the baking dish into a spacious roasting pan and add approximately 1-inch of water to the roasting pan.
  • Bake until a knife comes out clean when inserted in the center, approximately 1 hour in the preheated oven.
  • Chill in the refrigerator until fully set for 5 to 6 hours. To serve, gently loosen the flan by running a paring knife along the edges of the dish. Cover the dish with a plate, then carefully flip it over to unmold the flan onto the plate.
