Elevate your sleepover or brunch with these easy slipper cookies made from premade sugar cookie dough.
Ingredients:
  • 1 roll (16.5 oz) refrigerated sugar cookie dough
  • 1 cup mascarpone cheese, softened
  • 1/2 cup powdered sugar
  • 12 oz white chocolate baking bars or squares, chopped
  • 2 teaspoons coconut oil or shortening
Instructions:
  • Preheat your oven to 350°F and grease a cookie sheet. Unwrap the dough and flatten it onto the sheet in a rectangle shape. Bake for 10 to 12 minutes until lightly browned. Use a 2- to 2 1/2-inch foot- or slipper-shaped cookie cutter (or a knife) to cut the cookies. Let them cool slightly before gently transferring them from the sheet.
  • Combine cheese and powdered sugar in a small bowl until it forms a dough-like paste. Adjust consistency by adding a splash of milk if too thick, or more powdered sugar if too thin. Shape tablespoonfuls of dough into rounded mounds and place one mound on each cookie.
  • Set aside 1/2 cup of chopped white chocolate. Then, place a cooling rack on a sheet of waxed paper.
  • In a microwave-safe bowl, heat the rest of the white chocolate and coconut oil uncovered in 30-second intervals on High, stirring until smooth. Dip the top of each slipper cookie into the melted white chocolate, allowing any extra to drip off. Sprinkle the rounded part of the slipper with the saved chopped white chocolate. Transfer to a rack and allow to set.
