Indulge in decadent strawberry cake with rich white chocolate frosting.
Ingredients:
  • 2.75 cups cake flour
  • 2.5 teaspoons baking powder
  • 2 cups white sugar
  • 1 cup butter, softened
  • 1 (3 ounce) package strawberry flavored Jell-O®
  • 4 eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 0.5 cup strawberries, pureed
  • 4 ounces cream cheese
  • 4 ounces white chocolate baking squares
  • 3 tablespoons heavy whipping cream
  • 4 cups confectioners' sugar
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) to ensure the perfect cooking temperature.
  • Prepare two 9-inch round cake pans by greasing and lining them with waxed paper.
  • Combine the flour and baking powder in a bowl.
  • Cream together white sugar, butter, and gelatin until fluffy in a separate bowl. Add eggs one at a time, beating well after each addition.
  • "Mix in the flour mixture and milk alternatively into the sugar mixture until smooth. Fold in vanilla extract and strawberries until well combined."
  • Distribute the batter evenly into the prepared cake pans.
  • Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of both cakes comes out clean. Allow to cool completely.
  • In a saucepan over medium heat, combine cream cheese, white chocolate, and heavy whipping cream. Stir until mixture is smooth and white chocolate is melted, about 5 minutes.
  • Blend confectioners' sugar into cream cheese until a velvety frosting is created. Let it cool and firm up.
  • Frost the top of one cake, then place the second cake on top. Proceed to frost the top and sides of both cakes with the remaining frosting.
