Impress guests with this irresistible dessert.
Ingredients:
  • 200g white chocolate, melted, cooled
  • 40.00 ml coffee liqueur (see note)
  • 53.75 gm caster sugar
  • 300ml thickened cream, lightly whipped
  • 8 sponge finger biscuits, roughly chopped
  • 125.00 ml coffee liqueur, extra
  • Cocoa powder, to serve
  • White chocolate curls, to serve
Instructions:
  • In a heatproof bowl, melt chocolate with liqueur over a double boiler. Stir occasionally until smooth, then let it cool off the heat.
  • Beat egg yolks and sugar with an electric mixer until thick and pale. Gently fold the mixture into the chocolate until combined. Fold in the cream until just combined. Clean the bowl.
  • With an electric mixer, whip egg whites until soft peaks form. Gently fold in half of the egg whites into the chocolate mixture until just combined, then fold in the rest until fully incorporated.
  • Place sponge finger biscuits in 8 x 1 1/2-cup-capacity serving glasses. Drizzle with additional liqueur. Spoon white chocolate mousse over biscuits. Chill for 2 hours until firm. Sprinkle with cocoa powder and garnish with chocolate curls. Serve right away.
