White Chocolate-Almond Torte

Indulge in a decadent white chocolate and almond torte, a perfect sweet treat.
Ingredients:
  • 1 cup slivered almonds (6 oz)
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar
  • 3 eggs
  • 1/4 cup milk
  • 1 tablespoon almond-flavored liqueur or 1/2 teaspoon almond extract
  • 1 teaspoon vanilla
  • 6 oz white chocolate baking bars, chopped
  • 4 oz white chocolate baking bars, chopped
  • 2 tablespoons boiling water
  • 3/4 cup butter or margarine, softened
  • 2 1/2 cups powdered sugar
Instructions:
  • Preheat the oven to 325°F. Grease the bottom and sides of a 9- or 10-inch springform pan with shortening and lightly flour it. Toast almonds on a baking sheet for 4 to 7 minutes until lightly browned, stirring occasionally. Set aside 2 tablespoons of almonds for garnish. Grind the remaining almonds in a food processor or blender until finely ground; then set aside.
  • Combine flour, baking powder, and salt in a small bowl; set aside. In a large bowl, cream 1/2 cup butter and granulated sugar until fluffy. Add eggs one at a time, beating well after each addition. Mix in milk, liqueur, 1 teaspoon vanilla, flour mixture, ground almonds until smooth. Finally, fold in 6 ounces of white chocolate. Spread batter evenly in the pan.
  • Bake for 50 to 55 minutes until the center springs back when lightly touched and the top is evenly browned. Allow it to cool for 15 minutes before removing the side of the pan. Let it cool completely for about 1 hour and 30 minutes.
  • In a 2-quart saucepan, gently melt 4 ounces of white chocolate with boiling water over low heat, stirring constantly. Add 1 teaspoon of vanilla and let it cool to room temperature. In a large bowl, whip 3/4 cup butter until fluffy. Slowly mix in the cooled white chocolate mixture and powdered sugar until well combined.
  • Carefully slide a long knife under the cake to detach it from the bottom of the pan, then place it on a serving plate. Cover the sides and top of the torte with frosting and decorate with the toasted almonds you set aside.
