Transform white Christmas slice with gingerbread men and Turkish delight for a festive treat - ideal for gifting or snacking during the holidays!
Ingredients:
  • 125g unsalted butter, at room temperature
  • 120g (2/3 cup, lightly packed) brown sugar
  • 80ml (1/3 cup) golden syrup
  • 340g (2 1/4 cups) plain flour
  • 10.00 gm ground ginger
  • 2.50 gm mixed spice
  • 2.50 gm ground cinnamon
  • 1.25 gm bicarbonate of soda
  • 40g (1 cup) rice bubbles
  • 55g (1/4 cup) glacé ginger, finely diced
  • 80g (1/2 cup) macadamia nuts, lightly toasted, finely chopped
  • 200g white chocolate, melted, plus 30g extra, melted
Instructions:
  • Prepare a 3cm-deep, 16 x 26cm rectangular tray by lining its base and sides with baking paper. In a large bowl, use electric beaters to whip the butter and sugar until pale and creamy. Add golden syrup and egg, then gently mix in flour, ginger, mixed spice, cinnamon, and bicarbonate of soda with a spoon until a smooth dough is formed. Divide the dough into 2 discs, wrap them in plastic, and refrigerate for 15 minutes to chill.
  • Flatten 1 dough disc between baking paper until it covers tray. Place on tray and bake for 10-15 minutes until firm. Allow to cool before using.
  • Prepare a baking tray by greasing it and lining it with baking paper. Roll out the leftover dough disc until it is 5mm thick. Use a mini gingerbread man cookie cutter to create shapes from the dough. Arrange the shapes on the tray, ensuring there is space for spreading. Bake in the oven for 5-10 minutes or until they turn golden. Repeat the process with the remaining dough. Once done, move the gingerbread men to a wire rack to cool.
  • In a large bowl, mix together the rice bubbles, ginger, and macadamia nuts.
  • Stir in the white chocolate until fully coated. Spread a thin layer over the gingerbread base. Allow it to set for 2 hours. Use additional chocolate to affix gingerbread men on top.
