White Christmas lamington muffins

Make Christmas Lamington Muffins from the classic Aussie favorite.
Ingredients:
  • 375g plain flour
  • 12.00 gm baking powder
  • 165g caster sugar
  • 250ml buttermilk
  • 125ml vegetable oil
  • 1 tsp vanilla bean paste
  • 2 free range eggs
  • 110g jam
  • 453g vanilla frosting
  • 20g desiccated coconut
  • Silver cachous, to decorate
Instructions:
  • Preheat your oven to 200C and neatly line a 12-hole muffin pan with 1/3-cup (80ml) paper cases.
  • In a large bowl, mix flour, baking powder, and sugar. In a separate large jug, combine buttermilk, oil, vanilla, and eggs. Slowly fold the egg mixture into the flour mixture until just combined, being careful not to overmix.
  • Divide half of the mixture between the paper cases, then add a dollop of jam on top. Finish by covering with the remaining muffin mixture. Bake for 15-20 minutes until a skewer comes out clean when inserted into the center. Let them cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  • Mix the frosting and coconut together in a bowl, then transfer the mixture into a piping bag with a 1cm fluted nozzle. Squeeze the mixture onto the muffins, top with additional coconut and cachous for decoration.
