Enjoy SunRice's delicious cauliflower fried rice topped with a perfectly cooked egg.
Ingredients:
  • 600g cauliflower florets
  • 2 long red chillies, deseeded, finely chopped
  • 27.60 gm vegetable oil
  • 8 garlic cloves, thinly sliced
  • 900.00 gm cooked Jasmine Rice
  • 20.00 ml sesame oil
  • 4 eggs
  • 2 green onions, shredded
  • 82.50 ml chopped roasted cashews
Instructions:
  • Steam the cauliflower for 10 minutes over boiling water, then drain.
  • Submerge chili in a bowl of ice water and let it rest for 10 minutes until curled. Drain thoroughly before using.
  • Heat 1 tablespoon of vegetable oil in a large wok over medium heat. Sauté garlic until golden, about 4-5 minutes. Add rice, cauliflower, and sesame oil. Season well and stir-fry until hot, about 2 minutes.
  • Heat the remaining vegetable oil in a non-stick frying pan over medium-high heat. Crack the eggs into the pan and cook for about 2 minutes until the whites are fully set.
  • Create a vibrant rice bowl by layering fluffy rice with a perfectly cooked egg, sautéed onion, crunchy cashews, and a sprinkle of spicy chili on top.
