Turkey and white bean chili - a cozy way to reinvent leftover holiday turkey. Packed with green chiles for a kick of flavor.
Ingredients:
  • 1/2 pound dry white beans, soaked overnight in water, drained OR 2 15-ounce cans white beans, drained
  • 3 cups turkey stock
  • 1 clove garlic, minced
  • 1 medium onion, chopped (divided)
  • 1 tablespoon extra virgin olive oil
  • 1 jalapeño or serrano pepper, stem and most seeds removed, chopped (optional)
  • 1 teaspoon ground cumin
  • Pinch of ground cloves
  • 1/4 teaspoon cayenne pepper
  • 2 4-ounce cans chopped green chiles
  • 2 cups diced cooked turkey
  • Salt to taste (about 1/2 teaspoon to 1 teaspoon)
  • Garnishes and extras:
  • 1 1/2 cups grated Monterey Jack cheese
  • 1/3 cup (loose) chopped cilantro
  • 1/4 cup chopped green onions
  • 1 avocado, pitted, peeled, and chopped (or guacamole)
  • Chopped tomatoes or salsa
  • Corn tortilla chips and/or fresh warmed flour tortillas
Instructions:
  • For dry beans, cook by combining soaked and drained beans with turkey stock and half the onions in a large pot. Bring to a boil, then simmer until beans are very soft, about 1 to 3 hours depending on the bean type. Adjust water levels if needed. Optionally, skip soaking and pressure cook beans with stock and onions for 30 minutes on high pressure, followed by a 10-minute natural release.
  • In a large soup pot, mix the cooked beans with the turkey stock. Bring to a boil, then simmer.
  • In a skillet over medium heat, sauté jalapeño, onions, garlic, and green chiles in olive oil until tender. Season to taste.
  • Combine the onion mixture with turkey in the pot along with salt to taste. Simmer for 10 minutes to 1 hour until the beans are soft and stew thickens.
  • Top with grated cheese and garnish with cilantro, chopped tomato, salsa, green onions, and avocados. Serve alongside warm flour tortillas or tortilla chips. If you enjoyed the dish, please consider leaving a rating and comment below!
