Slow-Cooker Turkey White Bean Chili

Try this easy, fragrant Slow-Cooker Turkey White Bean Chili recipe for a delicious meal ready in minutes, with corn and Progresso™ chicken broth adding a special touch.
Ingredients:
  • 2 lb lean ground turkey
  • 1 tablespoon olive oil
  • 1 large onion, chopped (1 cup)
  • 1 medium poblano chile, seeded, chopped
  • 3 cloves garlic, finely chopped
  • 3 cans (15.5 oz each) great northern beans, drained
  • 3 cups Progresso™ chicken broth (from 32-oz carton)
  • 1 box (9 oz) frozen shoepeg white corn, thawed
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano leaves
  • 3/4 teaspoon pepper
  • 1/2 cup sour cream
  • Chopped fresh cilantro, if desired
  • Lime wedges, if desired
Instructions:
  • Prepare the slow cooker by spraying it with cooking spray. In a large nonstick skillet, cook the turkey over medium-high heat for 6 to 8 minutes until no longer pink, then transfer it to the slow cooker. In the same skillet, sauté the onion, chile, and garlic in oil over medium heat for 5 minutes until the onion is tender, then add them to the slow cooker.
  • Blend 1 can of beans and 1 cup of broth in a blender on medium speed for 20 seconds or until smooth. Transfer the mixture to a slow cooker and add the remaining 2 cans of beans, 2 cups of broth, corn, chili powder, cumin, oregano, pepper, and salt. Stir well.
  • After covering, simmer on Low for 8 hours. Garnish each serving with a dollop of sour cream, cilantro, and lime wedges on the side.
