Whole cauliflower gratin

Cauliflower: trending, tasty, and multipurpose vegetable.
Ingredients:
  • 1.2kg whole cauliflower, trimmed
  • 50g butter
  • 82.50 ml plain flour
  • 515.00 gm milk
  • 187.50 ml tasty cheese, grated
  • 82.50 ml parmesan, finely grated (see note)
  • 1 tsp fresh lemon thyme leaves
Instructions:
  • Preheat oven to 200C (180C fan-forced).
  • Lay the cauliflower on a microwave-safe plate and cook on high for 8 to 10 minutes until tender.
  • In a small saucepan over medium heat, melt butter. Add flour and cook, stirring, until bubbling for about 1 minute. Gradually pour in milk, stirring until smooth. Bring to a boil, then reduce the heat to low. Simmer while stirring constantly for 3 minutes until the sauce thickens. Remove from heat and stir in 1/2 cup tasty cheese and 2 tablespoons parmesan. Season with salt and pepper.
  • Spread 1/3 of the sauce on the bottom of a 5cm-deep, 22cm round ovenproof dish. Arrange the cauliflower in the center, then pour the rest of the sauce over it. Sprinkle the remaining tasty and parmesan cheese on top.
  • Bake until cheese turns golden for about 20 minutes. Finish with a sprinkle of fresh thyme before serving.
