Grilled whole trout bursting with herbs and flavors, tender and flaky with crispy skin.
Ingredients:
  • 2 whole trout, cleaned
  • 1 tablespoon olive oil, divided
  • 1 pinch coarse sea salt to taste
  • 1 pinch ground black pepper
  • 0.5 lemon, thinly sliced
  • 0.5 sweet onion, thinly sliced
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
Instructions:
  • Get your outdoor grill ready by preheating it to high heat and gently oiling the grate.
  • Coat each trout generously with olive oil and sprinkle with sea salt.
  • Season inside cavities with a pinch of salt and a dash of black pepper. Fill each trout cavity with 1/2 of the lemon and onion slices, minced garlic, a sprig of rosemary, and a sprig of thyme.
  • Reduce the grill heat to low. Place the trout on the grill directly. Cook until the flesh easily flakes and the skins are browned, about 6 to 7 minutes per side, flipping just once.
