Elevate grilled chicken with a flavorful herb rub for a delicious twist.
Ingredients:
  • 8 medium green onions, chopped (1/2 cup)
  • 2 tablespoons chopped fresh rosemary leaves
  • 2 tablespoons chopped fresh flat-leaf parsley
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 clove garlic, finely chopped
  • 2 1/2-to 3-pound whole broiler-fryer chicken
Instructions:
  • For a charcoal grill: Set up a drip pan under the grilling area and place coals around the edge of the firebox. Preheat the grill for indirect heat.
  • Combine all ingredients, excluding the chicken, in a small bowl. Gently massage the mixture onto the chicken skin, ensuring to also add 2 tablespoons of the mixture into the chicken cavity. Insert a barbecue meat thermometer, making sure the tip is placed in the thickest part of the inner thigh muscle without touching the bone.
  • Grill the chicken, breast side up, over indirect heat for 1 to 1 hour 10 minutes, rotating halfway through, until a thermometer reads 180°F and juices run clear. Garnish to your liking.
