Grilled Lime Chicken

Grilled whole chicken with zesty Cuban lime, garlic, and cumin marinade.
Ingredients:
  • 1 whole chicken (3 to 3 1/2 lb)
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1/4 cup frozen limeade concentrate (from 12-oz can), thawed
Instructions:
  • Preheat your grill on high. Remove the backbone from the chicken and flatten it with your hands. Slice two 1/2-inch slits on each breast, tuck legs into slits, and fold wings behind the neck area.
  • Combine salt, cumin, pepper, and garlic powder in a small bowl. Rub the mixture all over the chicken. Place the seasoned chicken in a 13x9-inch disposable foil pan, breast side up, and grill over medium-low heat. Cook covered for 20 minutes, then flip the chicken and insert a meat thermometer into the thickest part of the inner thigh. Grill for another 10 to 15 minutes, brushing with limeade in the last 5 minutes, until the thermometer reads 180°F and the legs are tender.
  • After grilling the chicken, gently cover it with foil and allow it to rest for 10 to 15 minutes before serving.
