Tangy Cilantro Lime Grilled Chicken: Marinate chicken in zesty lime and cilantro, then grill for an easy and delicious meal.
Ingredients:
  • 2 pounds skinless, boneless chicken breasts
  • 2 tablespoons extra virgin olive oil for the marinade, plus more for grilling
  • Grated zest from 2 limes
  • Juice from 2 limes (about 1/4 cup)
  • 3 tablespoons chopped cilantro
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Lime wedges, fresh sprigs of cilantro, and slices of avocado, to serve
Instructions:
  • Flatten the chicken breasts to an even thickness: Sandwich the chicken breasts between two sheets of plastic wrap or wax paper and pound them to an even thickness using a meat mallet or rolling pin.
  • Prepare the chicken marinade by combining olive oil, lime zest, lime juice, cilantro, sugar, salt, and pepper in a large bowl. Massage the marinade into the chicken, then cover and refrigerate for at least 30 minutes, or up to 4 hours or overnight.
  • Preheat the grill until you can hold your hand about an inch over the grates for 1 second, aiming for a medium-high temperature.
  • Prepare the chicken: Remove the chicken breasts from the refrigerator. Pat them dry, then coat with olive oil. Grease the grill grates with oil-soaked paper towels and grill the chicken until cooked through.
