Marinate chicken thighs in zesty mix of olive oil, lime juice, and cilantro, then grill for a delicious weeknight meal.
Ingredients:
  • 0.5 cup chopped fresh cilantro
  • 0.25 cup olive oil
  • 2 tablespoons lime juice
  • 2 teaspoons ground cumin
  • 1 teaspoon dried Mexican oregano
  • 2 pounds boneless, skinless chicken thighs
  • lime wedges for garnish
Instructions:
  • In a large bowl, combine cilantro, oil, lime juice, cumin, oregano, salt, and pepper. Add thighs and mix well. Refrigerate covered for 2 hours.
  • Get your outdoor grill ready by heating it up over medium-high heat and giving the grate a light coating of oil.
  • Sear thighs for 6 minutes per side until fully cooked and juicy. Check for doneness by ensuring the internal temperature reaches 165 degrees F (74 degrees C). Garnish with lime wedges for extra flavor.
