Grilled Mexican-inspired chicken marinated in zesty cilantro-lime mixture.
Ingredients:
  • 1 (4 ounce) can diced green chiles
  • 0.5 cup canola oil
  • 0.25 cup chopped fresh cilantro
  • 2 limes, zested and juiced
  • 2 cloves garlic, finely chopped
  • 0.5 jalapeno pepper, ribs and seeds removed, finely minced
  • 1 tablespoon honey
  • 1 teaspoon kosher salt
  • 0.5 teaspoon ground black pepper
  • 1 pound skinless, boneless chicken breasts
Instructions:
  • Mix chiles, canola oil, cilantro, lime zest and juice, garlic, jalapeno, honey, salt, and pepper in a 1-gallon freezer bag, then seal tightly. Massage the bag to evenly distribute the flavors. Add chicken, ensuring it is fully coated with the marinade. Refrigerate for at least 4 hours, flipping the bag occasionally for best results.
  • Get your outdoor grill ready at a medium heat, and give the grate a light oiling.
  • Take the chicken out of the marinade and gently shake off any extra. Dispose of the remaining marinade.
  • Grill the chicken with the lid on the preheated grill until fully cooked, 4 to 6 minutes per side, or until juices run clear.
  • Rest the grilled chicken under aluminum foil for 4 to 5 minutes to allow the juices to evenly distribute back into the meat.
