Grilled chilli-lime chicken

Flavor-packed, easy chicken recipe.
Ingredients:
  • 68.75 gm sweet chilli sauce
  • 2 tsp grated lime rind
  • 42.00 gm lime juice
  • 2 tsp sesame oil
  • 2 garlic cloves, crushed
  • 2cm piece fresh ginger, grated
  • 4 (200g each) chicken thigh cutlets, skin removed
  • 100g snow peas, thinly sliced canola oil cooking spray
  • 250.00 ml beansprouts
  • 100g Asian salad leaves
Instructions:
  • In a ceramic or glass bowl, mix sweet chilli sauce, lime rind, lime juice, oil, garlic, and ginger. Set aside 2 tablespoons of the sauce mixture. Add chicken to the bowl and toss to coat. Refrigerate for 15 minutes.
  • Place snow peas in a heatproof bowl and cover with boiling water. Let it stand for 1 to 2 minutes until tender, then rinse under cold water and drain.
  • Prepare the barbecue plate or chargrill by spraying with oil and heating over medium-high heat. Grill the chicken for 5 to 7 minutes on each side until fully cooked.
  • In a bowl, combine snow peas, bean sprouts, salad leaves, and reserved sauce mixture. Toss together and serve with the chicken.
