Indulge in a decadent orange and white chocolate cake with your afternoon tea.
Ingredients:
  • 2 (about 500g) navel oranges
  • 80ml olive oil
  • 4.40 gm vanilla extract
  • 300g plain flour
  • 6.00 gm baking powder
  • 1.25 gm bicarbonate of soda
  • 40g desiccated coconut
  • Pinch of salt
  • 4 Free Range Eggs
  • 330g caster sugar
  • 100g white chocolate, melted
  • Icing sugar, to dust
Instructions:
  • Preheat your oven to 150C. Grease and line a 23cm springform cake pan. Trim the tops and bases off the oranges. Discard. Chop the remaining unpeeled oranges and blend them in a food processor until coarsely pureed. Mix in the oil and vanilla until well combined.
  • In a large bowl, mix together the flour, baking powder, baking soda, coconut, and salt. In a separate bowl, use an electric mixer to whip the eggs for about 3 minutes until they are light and fluffy. Gradually incorporate the sugar into the eggs while continuing to mix until well combined.
  • Gently combine the flour mixture into the egg mixture in 3 parts using a large metal spoon, alternating with the orange mixture, until just combined. Be cautious not to overmix to avoid a dense cake. Fold in the chocolate.
  • Transfer the mixture into the prepared pan, making sure the surface is smooth. Bake for 1½ hours, or until a skewer inserted into the center comes out clean. Allow it to cool in the pan for 5 minutes before moving it to a wire rack to cool completely. Dust with icing sugar before serving.
