Indulge in a stunning whole orange cake, bursting with fresh citrus flavor!
Ingredients:
  • 400g orange
  • 125g butter, melted
  • 257.50 gm milk
  • 3 eggs, lightly beaten
  • 225.00 gm self-raising flour, sifted
  • 215.00 gm caster sugar
  • 50.00 gm almond meal (ground almonds)
  • Orange zest, to decorate
  • 225.00 gm pure icing sugar, sifted
  • 10g butter
  • 42.00 gm orange juice
Instructions:
  • 1. Preheat the oven to 180°C/160°C fan-forced and grease a 24cm (base) fluted ring pan. 2. Place the oranges in a saucepan and cover with cold water. Bring to a boil, drain, then repeat the process. Set aside to cool.
  • Chop oranges and remove seeds. Blend oranges until smooth. Transfer to a bowl and mix in butter, milk, eggs, flour, sugar, and almond meal until combined. Pour into prepared pan.
  • Bake the cake for 50 to 60 minutes or until a skewer inserted comes out clean. Allow the cake to cool in the pan for 10 minutes, then transfer onto a wire rack to cool completely.
  • Prepare the icing by combining sugar, butter, and orange juice in a heatproof bowl over simmering water. Stir until smooth. Let it sit for 5 minutes until slightly thickened. Drizzle over the cake, sprinkle with orange zest, and allow it to set for 15 minutes before serving.
