Whole roast cauliflower with green sauce

Transform roasted cauliflower with caramelized edges and pair it with a spicy, peanut green sauce for a tantalizing dish.
Ingredients:
  • 2 bunches coriander, leaves picked, stems and roots reserved
  • 2 small (about 800g each) cauliflowers
  • 185ml (3/4 cup) extra virgin olive oil, light flavour
  • 55g (1/3 cup) peanuts, roasted, salted
  • 2 green shallots, coarsely chopped
  • 2 long fresh green chillies, coarsely chopped
  • 1 large garlic clove, chopped
  • 1 large lime, rind finely grated, juiced
  • 40.00 ml mirin
  • Fresh cauliflower leaves, blanched, to serve (optional)
Instructions:
  • Preheat the oven to 180C/160C fan forced. Distribute the reserved coriander roots and stems evenly between 2 large sheets of foil, then layer the cauliflower on top. Drizzle with 1/4 cup of oil and season generously. Wrap each packet tightly to seal in the flavors. Arrange on a baking tray and roast for 45 minutes. Unwrap and continue roasting for an additional 45 minutes until beautifully golden and tender.
  • Prepare the green sauce by blending coriander leaves, peanuts, shallot, chili, garlic, and lime rind until finely chopped. While processing, pour in lime juice, mirin, and the rest of the oil until mixture is smooth. Season to taste.
  • Drizzle the vibrant green sauce over a generous serving platter. Add cauliflower leaves for extra flair, if desired, then arrange the roasted cauliflower on top.
