Whole Wheat Apple Cider Bran Mini Muffins

Delicious mini muffins bursting with apple flavor, made with whole wheat flour, bran, fresh apple, applesauce, and apple cider. Ideal for breakfast or snacking.
Ingredients:
  • 0.75 cup bran cereal (such as General Mills® Fiber One®)
  • 1 cup whole wheat flour
  • 1 tart apple, peeled and diced
  • 1 tablespoon brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 1.5 cups cold apple cider
  • 0.5 cup applesauce
  • 2 eggs
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and generously spray two 24-cup mini muffin tins with cooking spray.
  • In a food processor, grind the bran cereal until it resembles flour. Transfer the ground cereal to a large bowl and add the flour, apple, brown sugar, baking powder, baking soda, cinnamon, ginger, and salt. Mix well to combine all ingredients.
  • Combine apple cider, applesauce, eggs, vegetable oil, and vanilla extract in a separate bowl. Gently mix in the flour mixture until combined; the batter will be runny. Let it rest for 1 to 2 minutes to thicken and double in size due to the baking soda and apple cider reaction.
  • Carefully spoon the batter into the greased muffin cups.
  • Bake in the preheated oven for 10 to 12 minutes until the tops spring back when lightly pressed. Cool before enjoying.
