Indulge in a healthy and delicious berry coffee cake from Betty Crocker's cookbooks, perfect for a guilt-free treat.
Ingredients:
  • 1/2 cup low-fat buttermilk
  • 1/3 cup packed brown sugar
  • 2 tablespoons canola or vegetable oil
  • 1 cup Gold Medal™ whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1 cup mixed berries (such as blueberries, raspberries and blackberries)
  • 1/4 cup low-fat granola, slightly crushed
Instructions:
  • Preheat oven to 350°F and grease an 8-inch round cake pan with cooking spray.
  • Combine buttermilk, brown sugar, oil, vanilla, and egg in a large bowl, stirring until smooth. Add flour, baking soda, cinnamon, and salt, mixing just until moistened. Gently fold in half of the berries. Transfer the mixture to a pan and top with the remaining berries and granola.
  • Bake for 28 to 33 minutes until golden brown and the top springs back when touched in the center. Allow to cool in the pan on a cooling rack for 10 minutes before serving warm.
