Moist whole wheat pancakes bursting with sweet blueberries, perfect for a delicious and healthy Saturday breakfast for the whole family. No butter needed when hot!
Ingredients:
  • 1.25 cups whole wheat flour
  • 2 teaspoons baking powder
  • 1 egg
  • 1 cup milk, plus more if necessary
  • 0.5 teaspoon salt
  • 1 tablespoon artificial sweetener
  • 0.5 cup blueberries
Instructions:
  • Combine the flour and baking powder by sifting them together, then set aside. In a separate bowl, beat together the egg, milk, salt, and artificial sweetener. Gently stir in the flour until just moistened, then fold in the blueberries until well incorporated.
  • Heat a sturdy skillet over medium heat, coat with cooking spray. Ladle 1/4 cup of batter per pancake into the pan. Cook until bubbly, approximately 1 1/2 minutes. Flip and cook until golden brown.
