Hearty oat pancakes with a hint of cinnamon for a delicious twist on a classic breakfast favorite.
Ingredients:
  • 2 cups buttermilk
  • 2 room-temperature eggs, lightly beaten
  • 0.33333334326744 cup 2% milk
  • 1.5 cups quick cooking oats
  • 1 cup whole wheat flour
  • 2 teaspoons white sugar
  • 1.5 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 2 tablespoons butter, or as needed
Instructions:
  • Combine buttermilk, eggs, and milk in a bowl and whisk until blended. Add oats and whisk until oats are moist. Let mixture sit for about 5 minutes until oats absorb liquid.
  • Mix the flour, sugar, baking powder, salt, baking soda, and cinnamon into the oat mixture until a smooth batter forms.
  • In a skillet over medium heat, melt 1/2 teaspoon of butter. Pour batter into the skillet and cook until bubbles form on the surface, about 2 to 3 minutes. Use a spatula to flip the pancake and cook for an additional 1 to 2 minutes until golden brown. Repeat with the rest of the butter and batter.
