Healthier pumpkin muffins made with whole wheat flour, oat bran, flaxseed meal, and applesauce.
Ingredients:
  • 1 cup whole wheat flour
  • 0.5 cup oat bran
  • 0.25 cup flaxseed meal
  • 1 tablespoon ground cinnamon
  • 1.5 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cloves
  • 1 egg, beaten
  • 4 tablespoons canola oil
  • 0.5 (30 ounce) can pumpkin pie filling (such as Libby's®)
  • 0.66666668653488 cup applesauce
  • 0.5 cup brown sugar
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a 12-cup muffin tin by lining it with paper liners.
  • Combine whole wheat flour, oat bran, flaxseed meal, cinnamon, baking soda, baking powder, nutmeg, and cloves in a large bowl.
  • In a medium bowl, use an electric mixer to beat the egg. Pour in the canola oil and whisk until smooth. Add pumpkin pie mix, applesauce, and brown sugar. Mix until smooth. Combine with the flour mixture until blended.
  • Evenly distribute the batter into the muffin cups.
  • Bake in the oven until a toothpick inserted into the center of a muffin comes out clean, about 25-28 minutes.
