Delicious pumpkin muffins with coconut, chocolate chips, applesauce, unrefined sugar, and whole-wheat and pastry flours.
Ingredients:
  • 2 cups pumpkin puree
  • 4 egg, beaten
  • 0.75 cup canola oil
  • 0.75 cup applesauce
  • 0.75 cup turbinado sugar
  • 1.5 cups all-purpose flour
  • 1.5 cups whole-wheat pastry flour
  • 1.5 teaspoons baking soda
  • 0.75 cup flaked coconut
  • 0.75 cup chocolate chips
Instructions:
  • Preheat your oven to a perfect 350 degrees F (175 degrees C). Prepare your muffin pans by greasing and flouring them or simply use convenient paper liners.
  • In a bowl, mix pumpkin puree, eggs, oil, applesauce, and sugar. In a separate bowl, combine all-purpose flour, pastry flour, baking soda, and baking powder. Gradually mix the flour mixture into the pumpkin mixture. Gently fold in coconut and chocolate chips. Pour the batter into muffin pans.
  • Bake in a preheated oven for 15 to 20 minutes or until a toothpick inserted in the center of a muffin comes out clean. Let cool on a wire rack for about 1 hour before serving.
