Kid-friendly pasta with broccoli, cauliflower, and cannellini beans - a tasty twist on a classic favorite.
Ingredients:
  • 12 ounces penne pasta
  • 4 cloves garlic, sliced
  • 3 cups broccoli florets
  • 2 cups cauliflower florets
  • 0.5 teaspoon salt, divided
  • 1 (15 ounce) can no-salt-added cannellini beans, rinsed and drained
  • 0.66666668653488 cup low-sodium vegetable or chicken broth
  • 2 tablespoons butter
  • 0.25 teaspoon black pepper
  • 0.5 cup grated Parmigiano-Reggiano cheese
Instructions:
  • 1. Bring a large pot of salted water to a boil, then cook penne until just slightly undercooked, about 9 minutes. Drain.
  • Heat oil in a large pot over medium heat until shimmering. Sauté garlic until golden, for 2 to 4 minutes. Add broccoli and cauliflower florets, cook for 1 minute. Season with 1/4 teaspoon salt, cover, and cook for 3 minutes.
  • Combine beans, broth, butter, pepper, and remaining 1/4 teaspoon salt in the pot and simmer until beans are heated through and sauce slightly thickens, approximately 5 minutes.
  • Toss in the pasta and stir until warmed, approximately 1 minute. Finish with a generous sprinkle of Parmigiano-Reggiano cheese.
