Experience true Aussie flavor with this wholemeal damper, perfect for any barbecue.
Ingredients:
  • Vegetable oil, for greasing tray
  • 75g (1/2 cup) sesame seeds
  • 320g (2 cups) wholemeal self-raising flour
  • 300g (2 cups) self-raising flour
  • 1.20 gm salt
  • 250mls (1 cup) milk
  • 120g (1/2 cup) plain yoghurt
  • 20.60 gm extra milk or water
Instructions:
  • Preheat your oven to 200°C and lightly grease a baking tray with vegetable oil.
  • Evenly scatter sesame seeds on a clean baking tray and toast in a preheated oven until lightly browned, about 5 minutes. Set aside 1-2 tablespoons of the seeds for topping the damper.
  • Sift both flours and salt into a large bowl, keeping the bran in. Add toasted sesame seeds and mix. Create a well in the center, pour in milk and yogurt. Stir gently with a fork until mixed. Use your fingertips to form a dough, then transfer it to a floured surface. Knead lightly, shape into a ball, and flatten to 18-20cm. Cut a deep cross in the center, brush with extra milk or water, and sprinkle with sesame seeds. Place on a greased tray.
  • Bake in a hot oven for 25 minutes. Then, lower the oven temperature to 180°C and continue baking for 5-10 minutes until the damper sounds hollow when tapped. Serve warm or let it cool.
