Wild boar burgers

Delicious wild boar burgers made with beautifully marbled meat. Ask your butcher to mince boar shoulder or belly for juicy perfection.
Instructions:
  • Combine the mince in a bowl, using your hands to mix and break down the fat for better binding. Shape the meat into 4 equal balls, then flatten each to 1cm thickness, slightly larger than the buns. Chill in the fridge for 30 minutes. Preheat the oven to 120°C/250°F/gas ½. In a small bowl, combine brown, Worcestershire, and tomato sauces to taste. Add chopped shallots and mix. Warm the buns in the oven for 8 to 10 minutes. In a non-stick pan over medium-high heat, fry the burgers for about 4 minutes per side until cooked through, seasoning generously. Assemble the burgers by spreading shallot sauce on the bun bases, topping with sliced apple, burger, blue cheese, watercress, and the bun lids. Serve hot.
