Delicious wild rice casserole with chicken broth, water chestnuts, and sautéed veggies for a flavorful and tender dish.
Ingredients:
  • 2 (14.5 ounce) cans chicken broth
  • 1 cup uncooked wild rice
  • 0.5 cup water chestnuts, sliced
  • 0.5 pound fresh mushrooms, sliced
  • 0.5 cup onion, chopped
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • In a medium saucepan, heat the chicken broth until it reaches a boil.
  • Combine chicken broth, uncooked wild rice, water chestnuts, butter, and salt in a 1 1/2-quart baking dish.
  • Bake uncovered in the hot oven for 30 minutes.
  • While the rice mixture is baking, melt the rest of the butter in a medium skillet over medium heat. Sauté mushrooms and onion until tender, then mix them into the wild rice.
  • Continue baking covered until all the liquid has been absorbed, approximately 30 additional minutes.
