Fluffy pancakes with a nutty twist, using cooked wild rice for texture. Customize rice amount to suit your taste.
Ingredients:
  • 3 cups buttermilk
  • 3 cups all-purpose flour
  • 1.5 teaspoons ground nutmeg
  • 0.75 teaspoon salt
  • 3 tablespoons butter, melted
  • 1.25 cups cooked wild rice
Instructions:
  • In a large bowl, combine eggs, buttermilk, and vanilla and whisk until smooth. In a separate bowl, whisk together flour, sugar, baking powder, nutmeg, and salt. Gradually add the dry ingredients to the egg mixture, stirring well to form a smooth batter. Gently fold in butter and cooked wild rice.
  • Preheat a lightly oiled griddle or skillet over medium-high heat.
  • On a hot griddle, gracefully pour 1/4 cup of batter for each pancake and cook until beautifully browned for about 1 1/2 minutes. Gently flip and cook for another minute until perfectly golden. Repeat with the rest of the batter, creating a delightful stack of pancakes.
