Delicious Thanksgiving stuffing with wild rice, celery, bell pepper, and croutons.
Ingredients:
  • 1 cup hot water
  • 3 cubes chicken bouillon, crumbled
  • 1 (6 ounce) package long grain and wild rice, such as Ben's Original
  • 1.25 cups cold water, or as needed to cover
  • 1 cube chicken bouillon
  • 1 cup chopped celery
  • 0.5 cup chopped green bell pepper
  • 1 (5.5 ounce) package seasoned croutons
  • 2 teaspoons poultry seasoning
Instructions:
  • Prepare flavorful wild rice: In a medium saucepan, whisk hot water with crumbled bouillon cubes until dissolved. Add wild rice and enough cold water to cover; bring to a boil.
  • When the mixture comes to a boil, lower the heat, cover the pot, and let it simmer, stirring occasionally, until all the water is absorbed, approximately 25 minutes. Remove from heat, keep it covered, and allow it to sit for 5 minutes. Fluff the mixture with a fork before serving.
  • Preheat the oven to 325°F (165°C) and generously grease a baking dish.
  • Prepare a flavorful broth by dissolving a bouillon cube in hot water; set aside for later use in the stuffing.
  • In a skillet over medium heat, melt butter. Add celery and green pepper; sauté until tender for 5 to 7 minutes. Mix in reserved broth and transfer to a large bowl. Stir in cooked rice, croutons, and poultry seasoning; then transfer to the baking dish.
  • Bake with a lid on in the heated oven for 30 minutes.
