Wild Rice Stuffing

Irresistible fruit and nut stuffing, great as a snack anytime!
Ingredients:
  • 1 cup uncooked wild rice
  • 2 1/2 cups water
  • 1/3 cup butter or margarine, melted
  • 1 cup orange juice
  • 1 medium tart cooking apple, peeled and cut into 1-inch chunks
  • 1 cup dry bread crumbs
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts
Instructions:
  • Preheat oven to 325°. In a 2-quart saucepan, bring wild rice and water to a boil, stirring occasionally. Lower the heat, cover, and simmer for about 45 minutes until wild rice is tender. Drain excess water.
  • Combine the butter and orange juice in a 2-quart casserole dish. Add the apple, wild rice, bread crumbs, raisins, and walnuts. Cover and bake for approximately 1 hour until the apple is tender.
