Wild strawberries and vanilla cream

Ingredients:
  • 4 handfuls wild strawberries
  • 1 tablespoon caster sugar
  • 1 vanilla pod scored lengthways and seeds scraped out
  • 1 splash sherry vinegar
  • 1 pot crème fraîche
  • a few small fresh mint leaves
  • 1 orange zest of
Instructions:
  • Select the finest strawberries and set them aside. Place the remaining strawberries in a bowl and mix in the sugar, half of the vanilla seeds, and the vinegar. Use a fork to mash the mixture together and let it sit for 10-15 minutes. Stir the remaining vanilla seeds into the crème fraîche. When ready to serve, spoon a dollop of vanilla cream into each bowl, create a well in the center, and add the macerated strawberries. Slice some of the reserved strawberries in half and sprinkle all over the vanilla cream. Garnish with mint leaves and orange zest before serving.
