Spooky witch hat-shaped chocolate ice cream sandwiches for a fun Halloween treat!
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 1/3 cup butter or margarine, softened
  • 1 egg
  • 3 cups mint chocolate chip ice cream
  • 1 cup dark cocoa candy melts
  • Betty Crocker™ candy sprinkles, if desired
Instructions:
  • Preheat your oven to 375°F. Combine cookie mix, butter, and egg in a medium bowl until a soft dough forms. Roll out the dough on a lightly floured surface to 1/4-inch thickness. Use a 3- or 4-inch witch hat-shaped cookie cutter to create shapes. Place the cutouts 1 inch apart on an ungreased cookie sheet.
  • Bake for 9 to 11 minutes until edges are lightly golden. Allow to cool for 2 minutes, then transfer to wire racks. Let cool completely for about 30 minutes.
  • Assemble each ice cream sandwich by sandwiching approximately 1/4 cup of ice cream between 2 cookies. Individually wrap each sandwich in plastic wrap and freeze until firm, around 1 hour or until ready to serve. Follow the candy coating package instructions to melt it, then brush it over one side of each ice cream sandwich. Sprinkle with decorations and freeze until the coating is set.
