Delightful chicken and vegetable wontons, a family favorite.
Ingredients:
  • 1020.00 gm chicken style liquid stock
  • 3cm piece fresh ginger, peeled
  • 31.50 gm soy sauce
  • 150g chicken mince
  • 5.00 gm cornflour
  • 1/2 small carrot, grated
  • 1/2 small zucchini, grated
  • 2 button mushrooms, grated
  • 2 tsp finely chopped fresh chives
  • 1 garlic clove, crushed
  • 16 wonton wrappers
  • chopped fresh chives, to serve
Instructions:
  • In a large saucepan, combine the stock, ginger, 1 tablespoon of soy sauce, and 2 cups of cold water. Cover the saucepan and bring the mixture to a gentle simmer over medium heat.
  • Combine ground meat, cornstarch, shredded carrot, grated zucchini, sliced mushrooms, chopped chives, minced garlic, and the rest of the soy sauce in a mixing bowl.
  • Lay a wonton wrapper on a cutting board. Spoon a generous teaspoon of mince mixture in the middle. Moisten edges with water. Fold sides up to create a pouch, then seal by pinching. Transfer to a plate and continue with the rest of the mixture and wrappers.
  • Gently drop wontons into simmering stock and let them cook for 5 to 7 minutes until they float to the surface and are cooked through. Using a slotted spoon, transfer the wontons to bowls. Remove the ginger. Pour the flavorful stock over the wontons, sprinkle with chives, and serve.
