Yellow bean, vodka and smoked haddock risotto

Elevate risotto with smoky haddock and a splash of vodka for a unique and unforgettable dish.
Ingredients:
  • 1 basic risotto recipe
  • 4 shots vodka in place of wine in the basic risotto recipe
  • 700 g smoked haddock from sustainable sources, ask your fishmonger, undyed
  • 565 ml milk
  • 2 bay leaves
  • 255 g yellow beans stalks removed, finely sliced
  • 1 handful yellow celery leaves, from the heart
Instructions:
  • Prepare the basic risotto, substituting vodka for wine when adding liquid in Step 2. Poach the haddock gently in milk and stock from the basic recipe with bay leaves for 5 minutes covered. Remove from heat. In Step 3 of the basic recipe, incorporate the poaching liquid into the rice, then proceed with the recipe. Upon reaching the end of Step 3, mix in the flaked smoked haddock and beans, and continue to follow the rest of the recipe as usual. Do not garnish with Parmesan, but instead top with celery leaves. Finish with a splash of vodka and a squeeze of lemon for a flavorful touch. Enjoy!
