Ingredients:
  • 200g split peas
  • 250.00 ml fresh podded peas (about 500g unpodded) or frozen peas
  • 275g baby green beans (beanettes), topped, not tailed (see note)
  • 500.00 ml chopped snow pea sprouts
  • 60g mizuna
  • 120g sour cream
  • 62.50 ml finely snipped chives
  • 20.00 ml red wine vinegar
  • 5.90 gm Dijon mustard
Instructions:
  • Boil split peas in salty water for 16-18 minutes until tender but slightly firm. Drain well. Blanch peas and beans in boiling salty water for 3-5 minutes until tender. Drain and cool in cold water.
  • Prepare the dressing by mixing sour cream, chives, vinegar, and mustard in a small bowl. Season with salt and pepper to your liking.
  • Combine the snow pea sprouts, mizuna, drained peas, and beans in a bowl. Serve on plates and generously drizzle with dressing.
