"Crunchy onions elevate comforting yellow pea soup."
Ingredients:
  • 1 x 500g pkt yellow split peas
  • 60ml (1/4 cup) olive oil
  • 2 brown onions, halved, thinly sliced
  • 2.5L (10 cups) cold water
  • 60ml (1/4 cup) chicken style liquid stock
  • 2.50 gm ground cumin
  • 3 brown onions, extra, halved, thinly sliced
Instructions:
  • Thoroughly rinse split peas under cold water until clear. In a large saucepan over medium heat, heat 1 tablespoon of oil. Sauté onion for 5 minutes until soft. Add peas, water, stock, and cumin. Bring to a boil and simmer for 45 minutes until peas are tender. Let it cool for 5 minutes before serving.
  • Blend half of the pea mixture in a food processor until smooth. Transfer to a saucepan, then repeat with the rest of the pea mixture.
  • Warm the soup over low heat, stirring occasionally for 5 minutes until it is heated through. Finally, taste and season with salt and pepper to your liking.
  • Heat the remaining oil in a large frying pan over medium-high heat. Cook the extra onion until brown and crispy, stirring occasionally, for about 15 minutes. Drain on paper towel.
  • Pour the soup into bowls and sprinkle with crispy onion for the perfect finishing touch. Enjoy while hot.
